I had a wonderful with the Chef's course in Mazzano Romano! Magnifico! We made both artichoke ravioli and pork tortellini from artichoke and pork ribs cooked with vegetables, juniper berries and a good amount of red wine. The pastas were cooked al dente and then finished in a saute of guanniciale, butter and water from the artichoke steaming. I have never had a better meal!

My day of cooking in Mazzano was Fabiolous! I had the best meal I'd had in two weeks in Italy and even got to help prepare it. Seeing Mazzano was icing on the cake. What a pleasant change from the bustle of Rome. Thanks, Ruth Ann Stoddard

Just a quick note to say how much I enjoyed the Mazzano Romano class last week. The day was the highlight of our Italian vacation, from the cooking lesson itself to the tour of the nearby medieval village and winery. We are writing down and learned an enormous amount. Anyone going to Rome who wants a cooking class this is it!! Go to his house out of the city which is amazing.

We just spent the day with Fabio at his villa in Mazzano. There were 4 Canadians in our group and we met with 4 Americans. We spent the day shopping for produce and preparing a magnificent meal. Bellissimo! Kathryn Bachhofer

The Neighboring Town

Mazzano Romano for the cooking course, they have the option of seeing a Neighboring town: Calcata is a comune and town in the Province of Viterbo in the Italian region Latium, located 47 km north of Rome by car, overlooking the valley of Treja river. Calcata borders the following municipalities: Faleria, Magliano Romano, Mazzano Romano, Rignano Flaminio. In the 1930s, the hill towns's fortified historic center was condemned by the government for fear that the volcanic cliffs which the ancient community was built upon would collapse. Local residents moved to nearby Calcata Nuova. In the 1960s, the emptied historical centre began to be repopulated by artists and hippies who squatted in its medieval stone and masonry structures. Many of the squatters eventually purchased their homes, the government reversed its condemnation order, and the residents of what had become an artistic community began restoring the ancient town. This trend has continued. Today the town has a thriving artistic community described in the New York Times as what "may be the grooviest village in Italy, home to a wacky community of about 100 artists, bohemians, aging hippies and New Age types." The historical centre now includes restaurants, cafes, and art galleries.

Your English speaking Italian chef was trained at the Ritz Escoffier cooking school. After a year he returned to Rome where he created and managed a chain of successful American steak houses in Rome. In 2004 he opened That’s Amore restaurant in the center of Rome close to theTrevi Fountain and then decided to transform his property in the countryside into a cooking school and guest house.

Learn to Cook in a Villa in the Countryside

30 minutes outside of Rome you will be welcomed by the ancient medievil village, Mazzano Romano.

After visiting with local merchants and hand-picking fresh ingredients you will head to his charming featured property set in a gigantic forest.

Fabio will teach you the basics of preparing Italian pasta and encourages creativity using inspiration from the fresh ingredients of the current season.

The hum of the soothing river flowing below and the relaxing cool breeze as you sip local Italian wine is sure to make this a day to remember.

Morning Class

Duration : 5hrs

You will meet at the Campo dei Fiori market at 9:30am and purchase of fresh produce to make in class.with a market visit. on the visit you will be introduced Roman specialities. From here we walk to Fab's apartment at the top of the Spanish Steps with an amazing view. Here you will start your cooking class at about 10:45am.

Make gnochhi,  Make ravioli, Make meat dish, sit and eat

Return to the kitchen to start the hands on cooking class. Participants eat after each dish they prepare while it is hot. 

Class ends at about 2:30pm

Course: Particpants make 2 pastas and a meat dish. After each dish is made, particpants eat it while it is hot . All meals are served with wine. Minimum 2 people.

Includes:  2 pastas and a meat dish, wine with meals and for classes in the countryside, roundtrip transportation
