All this is just the beginning of our cooking programs that offer the unique opportunity to experience Italy through its cuisine, in an authentic Italian home setting, where time at the table is sacred and food is celebrated.

Our teacher, Anna uses traditional family recipes, demonstrating cooking techniques passed down from their mothers and grandmothers. Indeed, Anna is a grandmother and cooking doesn’t get better than this!  You will learn as they did – hands on!  Or in the pasta!!!! 

The produce we use is picked fresh from our garden and the organic extra virgin olive oil is our own – Fontana del Papa.

Your Hosts

"Assuntina & Claudio were born both in Monti della Tolfa and were brought up in the heart of this region  which is renowned for its wildenature, horses, meals Etruscans and archaeology.

Assuntina after completing a University degree in French Literature at Rome University, and over for 20 years professor,  her passion for languages  takes her to  meet people from all over the world and travel abroad. She is now Judicial translator at the Court of Civitavecchia.

They have three children Luca, Emma and Andrea. Claudio is an expert Sommelier. Assuntina and Claudio both  speak fluent English and French and of course Italian. 

In 2000 they became owner of Fontana del Papa... it was a ruin and the olive grove suffering from years of complete abandon. In their dreams and with their vision, Claudio and Assuntina saw it completely restored, the olive grove giving its rich fruits and guests at  Fontana del Papa. 

They have worked  with tenacity, passion and love. True, they were dreaming, but now their “project” has become reality. The olive grove has become a park and Fontana del Papa shines in all its ancient and imposing beauty...with guests coming from all over theworld ..."-  

Philosophy

•Our  cooking courses offer regional cooking , mainly vegetarian, using recipes and techniques passed down throughout the generations.

The extra virgin "organic" olive oil is bottled in cans. It is really one of the best Italian Olive Oils you can find. It is certified BIOLOGICO (organic) by Suolo & Salute (Association for the Organic Agriculture)

From Rome Fiumicino Airport (approx 50 minutes) 70km

From Ciampino 1 hour 15 minutes. 

Take the A12 motorway and exit at junction marked "Santa Severa". Here follow  the road sign "Tolfa". This winding mountain road

From Rome Termini there is at 8.05 a.m. and arrive in Civitavecchia at 9.15 - www.trenitalia.com 

(you can buy the thicket the morning of departure at the station )

October

October is a great month for cooking classes, it is the beginning of the olive harvest and the pressing of the new oil, chestnuts, lots of mushrooms are in season.  Temperatures are are usually around 18-25 C° but get cooler after the middle of the month.

Cooking at Fontana del Papa

Your hosts live at Fontana del Papa, and personally ensure that the well-being of each guest is attended to every day.

Guests will enjoy full immersion Italian culture, fine wines, nature and pleasure of slow life and food!

Local women will teach you their secrets of cooking at home!

...Great food and wine... The food is local, seasonal and fitted to the rhythms of the countryside... Claudio taught me so much about wine... everything is at the wish of the guest - no formality and great tranquility... Shouldn't forget to mention the water-drawn from a spring and once reserved for the Pope - hence the name. Great walks, wild flowers and much more... I loved every minute of it.. ... a chance for you to taste Italian culture, as well our food!

Itinerary

Transfer to/from train Station or your cruise ship in Civitavecchia

Hands on cooking class with our cook, lunch (meals prepared during your cooking lesson)

Each class meal consists of a first course as soup, hand - made pasta, or risotto, or gnocchi main course (as meat saltimbocca, involtini, polpettine, or chicken/rabbit  "cacciatora" or roasted with potatoes)  vegetable course (season garden), and dessert (tiramisù orciambellone or crostata or ciambelle al vino and anice) (upon request vegetarian menu) 

Short tutored wine tasting and oil tasting with Claudio expert Sommelier*

Walking Option ( small supplement)

After lunch, upon request, enjoy short escorted walk through Tolfa and to the "Castello della Rocca" perched high above the town. From this ruined 12th Century castle we have  one of the best views over the area, later  we stop by the "Antea"  to have our gelato. 

Later transfer to Civitavecchia train station or port.

Tuesday full day in “Undiscovered Etruria” Viterbo - Morning visit to  cheese maker. Lunch. This afternoon, visit to Tuscania and pottery - farm. Late supper at home.

Wednesday Morning cookery demonstration  lunch at Fontana del papa. Afternoon Tarquinia, visit ancient Etruscan remains. Visit to olive oil producer to taste wonderful olive oil ( the visit to the mill is available only during the harvest period). (during winter period the excursion to Tarquinia will be in the morning)

Thursday Full day in Rome on your own by train. (if you do not want to go to Rome we may offer other activities or excursions with an extra charge)

Friday Morning  visit to our weekly local market, Shopping.  Cooking class. Afternoon  pizza making! Farewell dinner

Saturday After Breakfast - departure to International Airport of Rome

1st day -   Transfer from Rome (Fiumicino) airport Welcome drinks  at Fontana del Papa Candlelit Dinner

2nd day - Weekly market. Spend the morning in the kitchen with our  cook, enjoy lunch, visit Etruscan museum in  Tarquinia, late afternoon. Tutored wine tasting with Claudio before dinner

3rd day - Breakfast and full day in Rome on your own by train. late dinner at home  (if you do not want to go to Rome we may offer other activities or excursions with extra charge).

4th day - Cooking in the morning,  followed by lunch. Afternoon walk around Tolfa,  stop for gelato. Cooking "Pizza"  before dinner.

5th day - After breakfast departure to the airport
